Cauliflower Base Blend
This is the lightest of all my blends; yet since it’s a cruciferous vegetable, it has incredible health benefits. (See page 16.) Blending also makes it easier for your body to absorb cauliflower’s beneficial phytonutrients. Win-win! Note: You can totally swap in frozen cauliflower florets here, if you’d like. Just run them under hot water to thaw them a little before putting them in your blender.

Servings: 4 cups
- 4 cups cauliflower florets (about 1 large, or 2 small heads)
- filtered water
- Place a steamer basket into a large pot, pour in a few inches of tap water (make sure the water is below the bottom of the basket), and set it over high heat. Add the cauliflower and steam, covered, for 9 to 11 minutes, until fork-tender. Remove from the heat and puree the cooked cauliflower with ¼ cup of filtered water until smooth, adding more water as necessary.
