Christmas Morning Smoothie
On Christmas morning, what kid wouldn't be thrilled to come downstairs to a hill of presents, and beside the Christmas tree, a red and green layered smoothie--not for Santa Clause, for them. Never mind that it's cold outside and you were thinking a steaming bowl of oatmeal might have been a better choice, the kids are going to get a real kick out of this nutrient-packed breakfast. Plus, the good fat in the avocado will keep them going strong all morning long. Hey, it's hard work unwrapping all those gifts. And don't forget Santa's Sugar Cookies here!

Makes: 2 servings

- 1/2 ripe avocado
- 1 teaspoon green sugar
- 2 cups low-fat milk
- 1 cup frozen strawberries, without syrup or added sweeteners
- 1 frozen banana
- Handful of ice cubes

> In the container of a blender, combine the avocado, green sugar, banana, handful of ice cubes, and 1 cup of the milk. Blend on high until smooth. Pour into two tall glasses until each is half full.

> Add strawberries and remaining 1 cup of milk to the same blender and blend on high until smooth. Pour the red smoothie on top of the green smoothies (do not stir or mix). You should have 2 distinct layers - green and red - in each glass. Top with a squirt of whipped cream and a sprinkle of green sugar. Serve with a straw.
